Spanish Quinoa Stuffed Peppers

This recipe has been one of my favorites so far in my plant based eating journey. It is super easy to make and so delicious. I got this one from the Minimalist Baker. Like I said before, she has great recipes that are super easy to make. You can find the link to this recipe here: Spanish Quinoa Stuffed Peppers

As sides to this dish I always have lime wedges or slices, whatever your preference is, the salsa that is added to the quinoa mixture, and an avocado “mayo.” (See below for recipe)

Avocado Mayo 

one whole avocado

juice of one lime

cilantro to taste

tiny bit of olive oil

Blend in a blender, food processor, bullet etc…

I headed over to Amazon because they have pretty much anything and everything you need in life! #amazonislife #iamaddictedtoamazon HA! Anyone else? Anyway, I found this tongue scraper, clicked the buy now button, and it was in my mailbox a day later. Eating Plant Based…most of the time!


This past summer I decided that I wanted to eat plant based most of the time. What I mean by most of the time is that on the weekends I will eat eggs and fish. So I guess I can consider myself a pescetarian. I love fruits and vegetables so eating plant based most of the time has not been an issue for me and perhaps in the future I will only eat plant based. As a meat and poultry eater my whole life…I wanted to take baby steps. I am not one to make up my own recipes so I am constantly, looking for plant based recipes…and there are a TON. I follow the Minimalist Baker and love her recipes. They all either have 10 ingredients or less, 1 bowl, or are 30 minutes to prepare.

My Life, My Passions



I have been a teacher for 13 years, going into my 14th this year. I love that I love going into work everyday and am able to have an impact on the 5 and 6 year olds that I get to know each and every year. I teach everyday…I teach the curriculum, I teach social skills, I teach manners, I teach love and kindness, but everyday I am also learning from my students and that is what I really love about teaching. We are lifelong learners.
