This recipe has been one of my favorites so far in my plant based eating journey. It is super easy to make and so delicious. I got this one from the Minimalist Baker. Like I said before, she has great recipes that are super easy to make. You can find the link to this recipe here: Spanish Quinoa Stuffed Peppers.
As sides to this dish I always have lime wedges or slices, whatever your preference is, the salsa that is added to the quinoa mixture, and an avocado “mayo.” (See below for recipe)
one whole avocado
juice of one lime
cilantro to taste
tiny bit of olive oil
Blend in a blender, food processor, bullet etc…
Happy + Healthy Eating!
About two years ago I was reading something on one of the social media platforms and I came across an article about tongue scraping and I was sold right then and there. I headed over to Amazon because they have pretty much anything and everything you need in life! #amazonislife #iamaddictedtoamazon HA! Anyone else? Anyway, I found this tongue scraper, clicked the buy now button, and it was in my mailbox a day later. If you are intrigued by this and want to read more about the benefits of tongue scraping head over to my TidBits (My) Wellness tab.
Happy and Healthy Reading
This past summer I decided that I wanted to eat plant based most of the time. What I mean by most of the time is that on the weekends I will eat eggs and fish. So I guess I can consider myself a pescetarian. I love fruits and vegetables so eating plant based most of the time has not been an issue for me and perhaps in the future I will only eat plant based. As a meat and poultry eater my whole life…I wanted to take baby steps. I am not one to make up my own recipes so I am constantly, looking for plant based recipes…and there are a TON. I follow the Minimalist Baker and love her recipes. They all either have 10 ingredients or less, 1 bowl, or are 30 minutes to prepare.
*Tonight from the Minimalist Baker I will be making Spanish Quinoa Stuffed Peppers with a Creamy Cilantro Avocado Dressing (my own recipe). Head over to my TidBits Yummy Stuff section to get the recipe.
I have been a teacher for 13 years, going into my 14th this year. I love that I love going into work everyday and am able to have an impact on the 5 and 6 year olds that I get to know each and every year. I teach everyday…I teach the curriculum, I teach social skills, I teach manners, I teach love and kindness, but everyday I am also learning from my students and that is what I really love about teaching. We are lifelong learners.

Ever since I was a kid I have been interested in the world and always curious to see new places. I have been to numerous places but not nearly as many as I wish I have been. “Each year go someplace you have never been.” This is the quote that I live by now, whether it is a day trip, a road trip, or over seas…I will always make the time to go and collect beautiful moments.
