This recipe has been one of my favorites so far in my plant based eating journey. It is super easy to make and so delicious. I got this one from the Minimalist Baker. As sides to this dish I always have lime wedges or slices, whatever your preference is, the salsa that is added to the quinoa mixture, and an avocado “mayo.” (See below for recipe)
one whole avocado
juice of one lime
cilantro to taste
tiny bit of olive oil
Blend in a blender, food processor, bullet etc…
